In 2009 When my daughter (11 at the time) wanted me explain why I enjoy watching cooking shows I could only explain by letting her take down a recipe and to help her make it. We were watching a show about 2 guys camping and making their food on an open fire (I tried looking it up, but I couldn't find the name of the show). This recipe has become a family favorite and a must have when we go Safari.
Bacon Bombs
Recipe makes 1, simply multiply it by the number of bombs you want to make.Ingredients:
3 pieces of Streaky Bacon1 large fresh Brown or Black Mushroom (about the size of your palm)
1 egg - smaller ones work better
1 slice of Tomato
1 paper thin slice of onion *optional
salt and pepper to taste
2 tbs Grated Mix of Cheddar and Mozzarella Cheese
Instructions:
- Cut some heave duty foil into a 30cm x 30cm square and spray with non-stick spray
- Place the bacon streaks on a chopping board and run a knife over them to stretch them to about double their length
- Arrange the bacon on the foil in a star, crossing them in the middle of the foil
- Scoop out the stalk of the mushroom using a teaspoon (scoop deep, but do not break the mushroom)
- Balance the mushroom in the middle of the bacon and break the egg into the stalk hollow (try not to break the yolk and use the foil to create a well to stop the white from running everywhere)
- Gently layer the Tomato and onion on top of the egg and season
- Add about 2 tbs cheese on top of the stack
- Now gently wrap the end of the bacon over the stack and then close the foil onto a bomb (think of a lollipop wrapper leaving a steam hole where the stick should be - I sometimes use a macaroni)
- Bake in a 200°C oven for 15 to 20 minutes
When camping we simply put the parcels between the hot coals or use the Webber - Test the mushrooms for readiness by gently pressing the bottoms it may take a little longer on a fire.
